White Chocolate Chip Oatmeal Cookie

This homemade cookie recipe is one of the best if you like chewy, crunchy, salty, and sweet all rolled up in one. It is full of all the good stuff~oatmeal, brown sugar, white chocolate chips, and nuts.

Serves: 5 dozen
  • 1 cup butter, softened
  • 1 cup light brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 eggs, room temperature
  • 2 tsp vanilla extract
  • 3 cups self-rising flour
  • 1½ cups regular uncooked oats
  • 1 12ounce pkg white chocolate chips
  • 1 cup walnuts, coarsely chopped
  1. Beat butter until creamy.
  2. Gradually add light brown sugar and granulated sugar. Beating until light and fluffy.
  3. Add eggs, one at a time, mixing after each addition, beating only until the yellow disappears.
  4. Stir in vanilla extract.
  5. Gradually add flour to butter mixture, beating until well blended.
  6. On lowest mixer setting, add oats, white chocolate chips, and walnuts. Batter will be thick and chunky.
  7. Drop by teaspoonfuls onto a lightly greased cookie sheet.
  8. Bake at 350 degrees for about 9 minutes. Cookies will be slightly brown on edges.
  9. Allow to cool on baking sheet for about 3 minutes then remove.
  10. Makes 5 dozen
Tip: Use two separate cookie sheets alternating to speed up overall working time.
**This recipe is very thick and chunky requiring a large stand mixer with enough power to combine the ingredients.
